Easter Ham - Monday Munchies

The piggy might just be my very favorite meat with which to cook.  I don't do it often (excluding pork tenderloin) because it is not the best for my heart or thighs, but let's give credit where credit is due!   Pork is delicious!  So if you plan to use pork in a traditional Easter dinner, consider branching out a bit.  After all, it does not have to be your Grandmother's Easter Ham anymore.  Choose a great glaze or chutney to step it up.  Or put the ham in a casserole for a great one-dish meal for large groups.  Or explore the use of pork in an ethnic dish for your holiday enjoyment.  Here is some inspiration:
