Boozy Strawberry Coconut Limeade Popsicles

Awhile back I tweeted that I was enjoying a spiked popsicle I’d thrown together that afternoon and I thought it was time to share it with you! I’ve been so inspired by the “Poptails” (Popsicle Cocktail) found over on Bakers Royale. Every single one sounds incredible! Her beautiful creations have inspired me to give it my own spin.


This is perfectly refreshing on a hot summer’s evening! You can make versions for the kids by leaving out the alcohol. Just make sure not to get them mixed up in the freezer!

It’s pretty easy to make your own!
Ingredients:

6-7 strawberries, hulled
6 oz Coconut Water (I used the Naked Juice brand)
4 oz Limeade
2 oz Citron Vodka (feel free to decrease if you prefer)

Directions:
Blend all ingredients together in a blender or food processor.
Pour slowly in your popsicle molds so the seeds stay behind– you can strain as well, but I found most of the seeds stayed behind in the cup if I poured very slowly.

Freeze for 4-6 hours.  Enjoy!


I first tried these without the strawberries – 2 parts coconut water, 2 parts limeade and 1 part citron vodka.  They were delicious but a little more “icy” than a normal popsicle, which made them a bit challenging to get properly out of the popsicle mold! Pureeing the strawberries with the alcohol definitely gave it a more traditional popsicle consistency.


I love how the coconut water adds a subtle flavor. Definitely experimenting more with using it in popsicles and cocktails!


Hope this frosty treat helps make this heat a little more bearable!
