Healthy Cupcake Options

It is that time of year.  Time to make a bunch of resolutions to "lose ten pounds" or "work out more".  So what's a cupcake lover to do?


Or maybe your resolution is to get your kids to eat better.  We all want that, right?  Well maybe they need a little help transitioning.  Cupcakes to the rescue!


Today we are featuring a list of cupcakes that are a bit healthier but still packed with chocolatey goodness.


My favorite site to find healthy recipes is Hungry Girl.  She just gets it, you know?  No one wants to eat rice cakes that taste like cardboard.  So she has an email newsletter that shares all her tested recipes (she also has a bunch of cookbooks and a new show on the Cooking Channel starting 1/8!) and her opinion on the best tasting foods out there that won't blow your diet.


This recipe for Death By Chocolate Cupcakes has three chocolately ingredients (chocolate cake mix, chocolate chips, and hot cocoa mix) but half the calories of a typical chocolate cupcake!  I'm definitely going to to give this one a try!

The award for the easiest cupcake you've ever made?  Her Yum Yum Brownie Muffins.  Yes, they are called muffins.  But don't let that fool you.  It's just because they come out so pretty you don't want to frost them.  The secret ingredient is pumpkin, but trust me, all you can taste is yummy chocolate goodness.  I've made them more than a few times!  By the way, the secret ingredient is the only ingredient other than cake mix - super easy!

Of course there are other options out there that might not be as low in calorie, but have more nutritional value!  Here are a few that intrigue me.

Babble has a recipe for Chocolate Avocado Cupcakes with Avocado Frosting.  The avocado is mild enough that it makes for a moist cupcake while getting some good fats in you! 
Simple Bites features a recipe for Chocolate Beet Cupcakes with Maple Cream Cheese Frosting.  Sound bizarre?  She assures that that beets add a complex flavor similar to milk chocolate and make the cupcakes super moist.  Worth a shot if it means getting beets into my kid!
Finally, I know this isn't a recipe for cupcakes, but these Black Bean Brownies from Mama Manifesto have me super intrigued.
So I'm dying to know.  Do you have any low-cal or hidden veggie treats that you make for dessert?  I have a New Year's resolution to lose weight. :)
