Balsamic and Blue Cheese Nachos - Monday Munchies

Heather and I had the rare opportunity to take a break from our hectic lives for the weekend and enjoy some crafty goodness at a cozy cabin in the mountains.  We called it our first official "Did Someone Say Party?" conference.  And, of course, we worked hard the entire weekend...NOT.  Actually, we did crafts and business planning pretty much from sun-up to sun-down.  But how on earth is that considered work??? 


Our favorite snack of the weekend was something we affectionately dubbed Balsamic and Blue Cheese Nachos.  My mom and I invented these while I was on maternity leave years ago.  I am sure we were inspired by the flavors of something we had in a restaurant, but I cannot remember the particulars.  They are so EASY and so DELICIOUS that we had to share.  Try them at your next party!!!  Your guests will thank you.

Here's how you make them:  Grab a bag of good quality kettle chips from the grocery.  I used Boulder Canyon Kettle Chips in the Balsamic Vinegar and Rosemary flavor.  Spread them into a single layer in an oven-safe dish or pan.  Sprinkle a nice quality blue cheese generously over the top.  Repeat with another layer of chips and then cheese.

Bake it at 350 degrees for about five minutes.  Watch them carefully because cooking times may vary.  You want the cheese to be melted and a bit bubbly, but the chips should not be browning.  Slide the whole pile (they should be sticking together pretty well) onto a beautiful plate.

Drizzle generously with a balsamic glaze.  I used something similar to this from my local grocery store.

Voila!  You are done.  Now chow down.  It is pure HEAVEN.
